Easy Crockpot "Rotisserie" Style Chicken

Ingredients
  • 1 whole chicken 4-5 pounds
  • 2 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp herbs de Provence or Italian seasoning
  • 1 tsp coarse ground black pepper
  • 4 cloves whole garlic optional
  • 1 onion quartered
  • 2 Tbs lemon juice (optional)
Directions
  1. Rinse the chicken and remove the "bits"  from the cavity. Pat dry with a paper towel.

  2. In a bowl, combine all of the dried spices. Rub the spice mixture all over the chicken, and sprinkle some into the cavity.

  3. Pack the onion and garlic into the cavity. 

  4. Optional - squeeze the lemon juice over the chicken.

  5. Place the chicken breast-side down into the slow cooker.

  6. Cover and cook on high for 3-4 hours, or on low for 7-8. 

  7. Remove chicken from slow cooker and slice.

  8. Devour.
